Hiding Vegetables

Evan has been anti-vegetables for awhile now. I've been trying to think of creative ways to get him to eat them. Monday night I made a veggie-marinara sauce for our pasta. He still picked around the carrots. Today for lunch I steamed some grated yellow squash and put it in a quesadilla. He ate almost all of it!



If anyone has a creative way of hiding vegetables so Evan will eat them please let me know!

Have you checked out the cookbook by Jessica Seinfeld-"Deceptively Delicious?" There are some pretty good recipes in there and they all have some kind of vegetable puree in them...so you can sneak the veggies without him knowing!

I have borrowed that cookbook but haven't had a chance to try any of the recipes yet. We struggle with Jackson on this from time to time. . . I sometimes buy the Juicey Juice that is the "Harvest Surprise". They put carrot and sweet potato puree in the juice. V8 splash would be similar too.

what about pureeing veggies and adding some sweetener and then unflavored gelatin and making veggie jigglers?????

sometimes i grate carrots (finely) into vanilla yogurt- she doesn't seem to mind it- there's not much taste and it makes it a bright color :) we have the same problem though!
